About Vicky's Kitchen & FAQs
About
Vicky's Kitchen makes ready-to-eat, plant-based meals, free from ultra-processed ingredients, artificial flavours, colourings, stabilisers or preservatives, in my home kitchen in sunny Norwich, UK.
I source ingredients as locally and seasonally as possible, and use packaging that is plant-based and commercially compostable. I deliver every Tuesday to NR1-NR7 and Trowse.
This is real food, made by hand, in Norwich.
Frequently Asked Questions
Why whole foods?
Like many people, I signed up for the Zoe Health and Science app during the pandemic in order to help Zoe gather data about COVID-19. I went on to become a subscriber to the Zoe Health and Science podcast and moved onto Ultra-Processed People by Chris Van Tulleken, the Blue Zones research by Dan Buettner and the research of Professor Tim Spector, amongst many others.
The sources I've listed are the basis of my own journey away from UPF and are the reason I now dedicate myself to providing whole, simple meals that make people's lives easier.
Why plant-based?
I want to help people make choices that put plants at the centre of meals, which is why I make meals that are convenient, delicious and which prioritise plants. It's better for the planet and better for your gut microbiome.
Please be aware that my own diet does include small amounts of locally and responsibly farmed meat, dairy and fish, and I am happy to include meat, dairy and fish elements in my plant-first menus. Please see my private catering information page for more.
Where do you stand on honey?
In an environment with diminishing bee numbers, I have made the choice to include honey from local, small batch beekeepers in some of my recipes. These dishes may not be suitable for people who prefer not to eat honey, and will be clearly marked as containing honey.
Can you provide a calorie count for your meals?
Not at the moment. Each meal is roughly 500 calories, however this varies from recipe to recipe. All meals include a diversity of plant-based fibre and protein which has been shown to affect the availability of caloric energy in foods.
Do you deliver outside of NR1-NR7?
Not at the moment. Journeys outside of the above radius have a disproportionate impact on my ability to manage my deliveries (as I deliver in person, every Tuesday).
If you're outside the radius but would like to try Vicky's Kitchen, you can always collect from my address on St Leonards Road, Norwich NR1 4BL, every Tuesday afternoon or Wednesday morning.
Why so much celery?
Celery is an ingredient in both store bought and my homemade vegetable stock, so it's present in most of my recipes - but usually not detectable as a discreet ingredient!
