Thai Larb with Jasmine Rice and Smacked Cucumber

A Thai salad traditionally made with meat and fish sauce, larb is spicy, fresh and packed with herbs.

This version uses tofu and miso but still has all of the depth and brightness of the original. Served with simple jasmine rice, peanuts (can be omitted), lettuce leaves and spicy smacked cucumber.
