Squash, corn and beans are companion plants that support and fortify each other during the growing season, a technique favoured by the indigenous people of the Americas.

This dish is a homage to the method and features refried beans, corn ribs, green salsa (made with gooseberries!) and sweet potato. Great brunch or lunch option.
